Racuszki

Little fluffy golden pancakes that are soft and chewy, while somehow still dense and filling. 
 Fried and perfectly smothered in sour cream, topped with jam or just sprinkled with icing sugar. Surprisingly, they are so easy to make!
You just need a little bit of patience to let the dough rise. 




Ingredients for a big plate of racuszki :


50 g of active yeast, 
3 teaspoons of sugar (or litttle more if you like)
2 cups whole milk 500 ml
2 spoons of plain flour


800-900 g of flour,
1 egg
pinch of salt
approx. 3/4 cup warm milk (we add it if necessary when the dought is too thick)
oil for frying

Optional: sour cream & your favorite jam
icing sugar


Warm up your milk, Add the yeast, flour and sugar. Whisk, and let it sit for 15 minutes.
In another bowl combine the egg, salt, flour, and once the yeast mixture has raised add it to the egg bowl and combine. Check the consistency. If it seems thick and tough to mix, add a little more warm milk. Cover the dought and let it rest in a warm place for 30 - 40 minutes.


Heat up a large pan and pour in a few tablespoons of oil. Once it is warmed up, turn the heat down to medium. Use a tablespoon to drop mounds of dought onto the pan. Don’t worry about the shape, there is no way to get perfect circles at first but they are so delicious you won’t care how they look. Once the racuszki are done, I place them on a paper-towel lined plate and immediately dust them with powdered sugar. Serve them with sour cream and jam if you wish, and make sure you try some while they are hot.

Together with my other half we love to cook up something together. But when a special occasion appears he always wants to suprise me, especially that it is not so easy to surprise me. This time he did a great job. When I came to him, all that was necessary to prepare sushi was ready and I could wach him making sushi for us. All was beautifully served and tasted great.

Homemade Croissants


Easy, quick to prepare and delicious croissants for small hunger.



I bet, that everyone, sometimes gets the feeling of eating something sweet, but you don't want to spend to much time in the kitchen. This croissants are excellent on a small hunger for sweets. You don't need to many ingedients, you don't have to spend lots of time in the kitchen and they are just delicious.




 Here's what you need to make these delicious croissants:
  • 500 g of all-purpose flour
  • 1/4 cup of warm milk, but not hot
  • 50 g of fresh yeast
  • 200 g of  soft butter
  • 1/2 teaspoon of salt
  • 5 teaspoons of sugar
  •  2 eggs
  • about 2 spoons of  sour cream
  • for feeling : marmalade, jam, chocolate, whatever you want

STEP 1. Activating the Yeast

In a bowl, mix 1 spoon of the all- purpose flour with the warm milk, yeast and sugar, just until the flour is mixed evenly and you don't see any clumps. Set the bowl aside and let it rise for about 10 minutes.

STEP 2.  Making the Dough

Mix together the flour, soft butter along with the salt and eggs then add the activated yeast. Knead the mixture for a few minutes till it will be soft and won't stick to the bowl. Cover the bowl with a towel and let it rise for about 30-40 minutes. You can also put it to the fridge for 1 hour.

STEP 3. Cutting the Triangles and making croissants


We're getting closer and closer to those yummy croissants! Now the dough is ready to cut the triangles which will form the croissants.



Divide the dough into three or four parts (depending on how big croissants you want to get ). Roll out the dough into a circle and then just divide it with knife just like you would cut the pizza. In the wider part put the filling and then using both hands, roll the triangle into a crescent by rolling from the base up. Moisten the top of the croissants with milk or melted butter and bake for about 12-15 minutes in the oven  preheated to 190 - 200 degrees.
